Minestrone has got to be one of my all time favorite dishes and this soup I think is one of the best I have ever made. I followed Ellie Krieger’s recipe roughly, though I made the following changes:
homemade veggie broth instead of chicken broth
2 zucchinis instead of green beans
28oz can of crushed tomatoes and a 14 oz can of diced tomatoes
an extra can of cannelini beans
shells instead of macaroni
nutritional yeast instead of parmesan…about a few tablespoons.
smoked paprika, crushed red pepper, an extra clove of garlic, and fresh parsley
yup, pretty much perfection.
