Soy Chorizo Baked Whole Wheat Pasta
Oh, Trader Joe’s…how I love you so. Why can’t you open a location in Boone, NC?!?! :’( Every time I go home to Charlotte, I gotta make a trip to TJ’s. This particular trip was very exciting because I decided to try Soy Chorizo.
Since I suck at recording percise measurements for recipes, I decided to take a picture. The ingredients include: half of an onion, sundried tomatoes, roasted red bell peppers, 3 cloves of garlic, and soy chorizo. I heated a sautee pan with about 1 tablespoon of oil then added the chorizo and onions (make sure you remove the casing!). I cooked that for a few minutes until the onions became soft. I then added the garlic and cooked it for another minute. Then, I added the peppers and sundried tomatoes and cooked for another few minutes. I added 1 jar of marinara, covered it with a lid, and reduced the heat to low and let it simmer while the pasta cooked.
Doesn’t that look amazing?! Because it definitely was :P
I used 1 box of whole wheat rotini. Then (this is totally optional) I put it in a baking dish and topped it with some vegan cheese I had leftover (pepper jack and cheddar) and baked it at 400 for about 10 minutes until the cheese melted.
This soy chorizo is definitely the best fake meat I’ve tried, and it’s completely vegan! It’s definitely got a nice kick to it, without being overwhelmingly spicy.
